This recipe comes from a deviation on a
popular Italian cookie called a Pizzelle which are waffle type
cookies made with anise. We flavor our yeti feet with orange
and use a cookie cutter to shape them.
Yields 3 dozen
6 eggs
3/4 cup vegetable oil
3 cups all-purpose flour
2 cups of white baking chocolate
1 cup sugar
½ cup orange liqueur
1 tablespoon baking powder
Zest of 2 oranges, chopped very fine
In a large bowl whisk together the eggs,
sugar, liqueur, and oil and mix thoroughly. Add the flour,
baking powder, and orange zest, and mix well to form a homogenous
batter. Set aside
at room temperature for 30 minutes.
Heat a pizzelle iron until very hot. Pour 2 tablespoons batter
onto the iron, close it, and return to heat. Cook until golden
brown, about 2 minutes. Use a cookie cutter in any shape (we
used cutters in the shape of feet!) to cut the cookies as soon
as they are removed from the pizzelle iron. Repeat until all
the batter is used. Let the cookies cool.
Melt the white chocolate and then dip
the 'toes' of the cookies into the chocolate. Let cool
and harden on wax paper or parchment paper.
